Lentil Soup

Introduction

Delicious Turkish-style lentil soup. Delicious Turkish-style lentil soup.
Number of Servings: 4

Ingredients

    1 cup red lentils
    2 tbsp canola oil
    2 or more cups water
    2 tbsp white flour
    1 tsp salt
    4 lemon wedges

Directions

Wash lentils in water, then put them in a pot with 2 cups of water. Cook them slowly until they are soft.
Don't close the lid of pot, it will boil over.
If water doesn't look enough to cook lentils, you can always add some more.
Pour lentils in a blender, and blend well.
In the same pot, pour canola oil and add white flour, then cook the flour by whisking until it becomes light brown, but don't burn it.
Then pour the lentils inside the pot, and adjust the consistency with some hot water. (It is good when it is thick).
Season with salt, and serve with lemon wedges.
Enjoy!

  • I like the taste of lentils by themselves (no spices) and would probably like this recipe. I'm going to walk to the market in a few minutes to buy lentils (used the last 2 days ago) & will post how I feel about this soup. Won't be using flour or lemons. - 9/2/08

  • I love lentils, but even halfway through reading this I thought it sounded pretty bland. What it really sounds like is a good base to start with...without the roux, any oil added should be for flavor, canola oil just doesn't cut it. Veggies and flavor...that's the ticket! - 9/2/08

  • This recipe is merely a suggestion - there is nothing to add any flavor except lemons. You could probably use this as a base and add carrots, kale, tomatoes or whatever veggies you have around. Then throw in curry poweder or italian seasoning of some kind. On it's own, it would be too bland. - 7/2/08
