Matbuka (Morrocan tomato salad)

Introduction

This is eaten on bread or pita and is typicali very hot but the heat can be reduced for personal taste. This is eaten on bread or pita and is typicali very hot but the heat can be reduced for personal taste.

Ingredients

    1 or 2 large bell pepper red/green
    5 jalapenos
    10 garlic cloves
    20 medium to large red ripe tomatos
    3 Tbsp extra virgen olive oil
    1 Tbsp sweet paprika
    1 tsp cayenne
    1 tsp salt

Tips

Instead of adjusting quantities, the salad can be frozen in small portions. It freezes beautifully and can be defrosted in the frige without damage.

Directions

1. Roast bell peppers until charred, peel and chop.
2. Fry the jalapenos until the skin loosens, peel and chop.
3. Peel the tomatos. One method is to cut a cross in their bottoms and soak in hot water, the other method is to simply roast them on a rack over an open flame.
After that chop them also.
4. Peel and chop coarsely the garlic.
5. Put the oil into a sausepan. Add the peppers and garlic, cooking until they have become soft.
6. Add the tomatoe and spices.
Cook for about 1 hour until the matbuka has become thick and dark. Take care that the bottom does not burn, stir constantly .
Let cool and enjoy with friends.
