Cheeseburger Soup

Number of Servings: 6

Ingredients

    1 cup carrots, sliced
    1 small onion, chopped
    1/4 cup chopped green pepper
    1 clove garlic, minced
    1 beef bouillon cube
    1 lb ground beef, cooked and drained
    2 1/2 cups 1% milk
    1/4 cup flour
    8 ounces American cheese, cubed
    1/2 lb bacon, cooked and crumbled

Directions

Combine first 6 ingredients and bring to a boil. Reduce heat and cover and simmer for 15 minutes. Stir in beef and 2 cups of milk. Combine flour and remaining milk until smooth. Gradually stir into soup. Bring to boil. Cook and stir for 2 minutes until thickened or bubbly. Reduce heat; stir in cheese until melted. Top with bacon before serving.
