Kenyan Tapioca Pudding

Ingredients

    2 cups water
    1/4 tsp salt
    1/3 cup quick-cooking tapioca
    1/2 cup agave nectar (or sugar)
    2 cups crushed pineapple
    1 tbsp lemon juice

Tips

You may need to leave it on the heat to get the tapioca to thicken to your liking.


Directions

Bring water to a slow boil over medium-high heat. Remove from heat and stir in salt, tapioca, and sweetener. Stir until thickened. Fold in pineapple and lemon juice.

Serving Size: Makes 8 1/2-cup servings.
