Honey mustard baked chicken

Sweet and savory at once, may not be the staple of every diet, but it makes a wonderful reward for a week well done. and at 160 calories, it won't trip your guilt sensors, even when your taste buds say it should! Ingredients

    1/4 cup butter (May substitute margarine)
    1/4 cup honey
    3 tbsp rice vinegar (chosen for mild flavor: use more or less to taste)
    3 tbsp brown mustard
    1 tbsp ginger
    3 lbs chicken breast, cut into strips.

Tips

Serve with rice and mixed veggies for an easy meal: The prep times on each of those vary perfectly for me so that everything ends up done at the same time!


Directions

line glass baking pan with single layer of chicken.

melt butter, (I recommend a PYREX measuring cup suspended in almost boiling water) stir in honey, mustard, ginger, and vinegar until mixture is consistent. The finished product will be thin and easily poured.

Pour over chicken, coating tops of all pieces. Roll chicken through glaze to coat all pieces evenly.

Bake uncovered at 350 for about 30 minutes, or until chicken is cooked through. Sauce will turn brown and slightly crisp on top.
