Homemade Tomato Soup

Number of Servings: 4

Ingredients

    1 Tbsp Canola Oil
    1/2 Medium Onion-Diced
    1 Large Carrot-Diced
    1/4 C Tomato Paste
    2 1/2 Cans of Diced Tomato
    3 C Chicken Broth
    3 Tsp Splenda
    1/4 C 1% Milk

Directions

Chop onion and carrot and saute in canola oil until soft
Add tomato paste and stir until veggies are coated
Pour in the canned tomatoes and chicken broth
Bring to a boil and simmer for 15 minutes
Blend until smooth with an immersion blender.
Stir in splenda and salt and pepper to taste.
Simmer on low for another 10 minutes or so.
Serve and enjoy!
