If not adding meat, just simmer for 2 hours covered on low heat.
I recommend adding meatballs or sausage or something which will add another level of flavor to your gravy. If you add it raw and let it cook in the gravy will it greatly enhance the flavor. Just be sure to cook it at a simmer for an hour or so to be sure it is cooked through and through.
Add tomato paste.
Add canned tomatoes.
Add water and wine.
Bring to a simmer, cover and cook for 30 minutes
If cooking meatballs (which will add flavor) gentle add them to sauce and return to simmer and cover for 30 minutes.
After that 30 minutes of cooking, stir gentle and simmer covered for one hour.
Serving Size: Makes 16 1/2 cup servings of gravy
