2 over-ripe plantains, mashed
3 TBS. melted coconut oil
3 TBS. onion, minced
1 jalapeno, minced
2 TBS. fresh grated ginger root
1/3 cup flaxseed meal
2/3 cup arrowroot flour
1 tsp. powder
1/2 tsp. soda
1 tsp. salt
1/2 TBS. chili powder
Mince onion and jalapeno. Place in mixing bowl.
Grate fresh ginger root and add to bowl.
Mash the plantains and melt coconut oil. Add to bowl and mix well.
In smaller bowl, measure all dry ingredients and gently toss.
Combine dry ingredients into plantain mixture.
Scoop into greased mini muffin trays. Nice big dallops because this mixture does not rise very much.
Bake for 18-25 minutes depending on your oven.
