Ingredients

1.5 cups minced onion
1 tablespoon minced garlic
1 teaspoon extra virgin olive oil
1 medium carrot minced
.75 cup mushrooms minced
1 tsp salt (divided)
1 tsp pepper (divided)
.33 cup chopped parsley
2 teaspoons Worcestershire sauce
5 tablespoons ketchup (divided)
1 cup italian seasoned breadcrumbs (2 slices bread)
.33 cup 2% milk
1 large egg
1 large egg white
1.25lbs ground turkey
Tips
use a food processor for the onion, carrot, mushrooms, makes for very short prep time.
I use parchment paper under the meatloaf for no added calories and easier cleanup.
Directions
preheat oven to 400 deg F
in a skillet add oil, garlic, onion
cook until onion is translucent (about 2 mins)
add carrot cook another 3 minutes
add mushrooms, 1/2 tsp salt,and pepper.
cook (on low) about 5 minutes to let the moisture release and evaporate, stirring occasionally until all are tender.
add Worcestershire, parsley and 3 tablespoons ketchup
mix until combined, and set aside to cool
In a large bowl, combine breadcrumbs, milk, 1 egg, and 1 egg white - mix well
add vegetables and turkey, rest of salt, rest of pepper
mix well and form into a 9 x 5 loaf
place in center of a 13x9 pan
brush remaining 2 tablespoons ketchup on top
cook @ 400 deg for 50-55 minutes.
let meatloaf stand for 5 minutes before slicing.
