Cornucopia Salad

Ingredients

    Candied Almonds:
    1/2 c. sliced almonds
    3 Tbs. sugar

    1 head green leaf lettuce (torn)
    1 head romaine (torn)
    1 cup chopped celery
    3 green onions, chopped
    1 11oz. can Mandarin oranges
    1 apple, diced
    1/2 cup raisins
    1/2 cup crumbled feta
    3 chicken breast halves, cooked, shredded

    Dressing:
    1/2 tsp. salt
    1/2 tsp. pepper
    1/4 cup olive oil
    2 tbs. sugar
    2 tbs. white wine vinegar

Directions

Cook chicken at 400 degrees for 25-30 minutes; shred.

Candied almonds: melt 3 tbs. sugar in a large frying pan with sliced almonds, stirring continuously until almonds are covered. Pour onto foil, let cool.

Toss all other ingredients, add in chicken and almonds. Mix dressing, pour over top.
