Skinha (slow cooked one pot meal)

Ingredients

    4 potatoes, peeled
    4 eggs in their shells
    4 chicken thighs/beef ribs
    4 100 gram pieces of beef tendons/cow feet
    1 whole head of garlic
    1 whole medium sized onion
    1 cup chickpeas (after soaking for the night)
    1 Tbsp sweet paprika
    1 tsp ground cumin
    1 tsp white pepper
    1 Tbsp salt
    1 tsp tumeric

Tips

ACooked on Friday and eaten on Saturday after slowing baking for about 20 hours. A really complete meal.


Directions

1. Put 1 tbsp olive oil in a big pot. Layer on top in this order: beef tendons/cow feet, garlic, onion, chickpeas, chicken/ribs, potatos and eggs. Add spices.
2. Add water to cover and up to 2 inches above food level.
3. In a bowl put half cup chopped onion, rice, some oil, salt. Mix together and put into a cook bag with water and place on top of the food.
4. Bring to a boil and cook on a medium heat for about 2 hours. Check for water height, add if necessary and put on a hot plate to continue cooking until noon the next day.
