Mary's homemade veggie soup

Introduction

Number of Servings: 6

Ingredients

    6 cups water
    6 vegetable Bullion Cubes
    1 medium potato w/skin on, cut into thin slices
    1 large carrot, cut into thin slices
    2 large celery stalks, cut into thin slices
    2 cloves garlic - minced
    1 medium yellow summer squash, cut into thin slices
    1/2 cup fresh broccoli florets, cut into small pieces
    1/2 cup chopped white onion

Tips

Great for cool/cold days.


Directions

Bring water to full boil, add bullion, let dissolve, add all the veggies, return to boil for 5 minutes, lower heat to slow boil, add any seasonings that you like, let simmer for 20 minutes.

Serving Size: Makes 6 1-cup servings
