Introduction

I combined ideas from a few different recipes and came out with these! At only about 60 calories each, they are perfect for when you really want a cookie! You can probably modify cooking time and make them into muffins as well :) I combined ideas from a few different recipes and came out with these! Ingredients

    2 cups spelt flour
    2 cups old fashioned oats
    2 tbsp. ground flaxseed
    1 tsp. cinnamon
    2 bananas
    1 cup applesauce
    2 tbsp. apple butter
    6 tbsp. egg whites or egg beaters
    1 cup peanut butter (I used JIF natural smooth)
    2 tsp. vanilla
    1 tsp. baking soda
    3/4 tsp. salt

Directions

Preheat oven to 350.
Mix all dry ingredients together in a large bowl.
Mash bananas in another bowl and mix with wet ingredients (applesauce, apple butter, egg whites, peanut butter, vanilla).
Add wet to dry and mix until blended, but don't over mix. I put batter in fridge for about 5-10 minutes to let it firm up a bit before dropping it onto cookie sheet.
Drop by tablespoons onto cookie sheet that has been lined with parchment paper.
Bake at 350 degrees for 10-12 minutes (I did 12 minutes and turned out perfect!)

Serving Size: makes 55 tablespoon sized cookies
