Introduction

Made this over to use ingredients I had on hand. Made this over to use ingredients I had on hand.
Number of Servings: 4

Ingredients

    1 1/2 cups shredded carrots
    1/4 cup raisins
    2 Tbsp light mayonnaise
    1 ounce pineapple juice
    1/2 tablespoon lemon juice
    1 small apple diced
    1/2 cup celery sliced
    Dash salt

    *Optional: 1/2 cup chopped apple, or well drained crushed pineapple, or 1/4 cup chopped celery (not included in nutrition information)

Directions

Soak the raisins in a cereal bowl of warm tap water. This plumps them up so they taste better in the salad. After soaking for a few minutes drain them and squeeze them dry with your hand. In a medium sized mixing bowl, combine the pineapple juice , mayonnaise, lemon juice. Add the carrots, apple, and raisins and stir well. Add one or more of the optional ingredients if you feel so inspired. Mix it all up and chill it until serving time.
