    2 lb - Lein Stew Beef (or Chuck), cubed
    1 - Onion, small - course chop
    1 - Garlic, 1 clove - minced
    1 tbsp - *Extra Light Olive Oil
    1 pkg - Baby Carrots - coarse chop
    12 small - New Potatoes (or small Red)
    4 tsp - Better Than Beef Boullion
    1/4 cup - Corn Starch
    Pepper to tastep


Toss beef cubes in flour and seasoning. Brown in batches
Saute garlic and onions in EVOO (about 1 minute);
Add 2.5 quarts (10 cups) of water, the carrotts and potatoes, and beef boullion. Bring to boil, stir, then cover 10-15 minutes. Can add corn starch to thicken. Season with pepper. Salt is optional as Beef Boullion can be salty. (Another 1 tsp can be added, to taste).
Makes approx 10 2-cup servings.
