Stephi's Healthy Pancakes

Ingredients

    1 c. Heart Smart Bisquick baking mix
    1/3 c. wheat bran
    1/4 c. ground flaxseed
    1 scoop (28 g) soy protein isolate powder
    1/4 tsp. baking powder
    1 T. ground cinnamon
    1 large egg
    1 1/2 c. skim milk
    Canola oil or cooking oil spray

Directions

Whisk together dry ingredients in large mixing bowl. Add egg and milk, and whisk to combine. Set aside for several minutes; the soy will absorb the liquid and thicken batter. Add milk or water if needed to reach desired consistency.

Heat griddle over medium high heat; wipe lightly with paper towel dipped in canola oil or use cooking oil spray. Ladle batter onto griddle in 4-inch diameter rounds. Brown on one side, until bubbles form and edge dries slightly. Flip onto other side, and brown.

Serving Size: makes 16 4-inch pancakes
