Ingredients

    1 head of cauliflower
    1/4 medium onion rough chopped
    3 cloves of garlic
    1.5 T of olive oil
    1 can fat free condensed milk
    1 box of 99% fat free Swanson chicken broth

Tips

I would not skip the baking of the cauliflower as it makes the cauliflower have a more nutty flavor. This is great with a provolone grilled cheese sandwich.


Directions

Rough chop cauliflower, garlic and onion. Drizzle with olive oil and bake at 350 degrees for 30 minutes. Place cooked veggies in a pot and bring to a boil with the chicken broth. Boil until tender, approximately 30 minutes. Turn off heat cool 5 minutes and add the can of milk. Run through food processor or use immersion blender until creamy and smooth. Makes about 6 1 cup servings.
