Soup - Homemade Minestrone

Ingredients

    1 tblsp olive oil
    1 cup chopped celery
    1 cup chopped onion
    1 cup diced carrots
    1 tblsp minced garlic
    4 cups low sodium chicken broth\
    2 cups water
    1 540 ml can Blue Menu Six Bean Medley
    1 large can no salt added tomatoes
    3 tblsp ketchup
    1/4 tsp Tabasco

Directions

Heat oil, add next 6 ingredients, cook 5 mins stirring often, add next 7 ingredients, bring to a boil, reduce heat to medium, boil gently partially covered for 15 mins. Add pasta, stir, boil gently for 12 mins.....optionally add grated parmesan to top each serving
