Oriental Broccoli Slaw with Turkey

Introduction

A great way to get your broccoli in - this is a light and delicious salad that is super-easy to make. A great way to get your broccoli in - this is a light and delicious salad that is super-easy to make.
Number of Servings: 2

Ingredients

    4 oz. diced cooked turkey (or chicken)
    6 oz. broccoli slaw (or regular coleslaw mix)
    1/2 cup chopped green onions
    1 tbsp sesame oil
    3 tbsp rice (or other white) vinegar
    2 tbsp low-sodium soy sauce
    1/2 tsp ground ginger (or crushed ginger root)
    Chow mein noodles or peanuts (optional)

Directions

Mix together turkey, broccoli slaw and green onions.
In a separate bowl, mix oil, vinegar, soy sauce and ginger. Toss with slaw mixture until coated.
Separate into 2 portions.
Top with crispy chow mein noodles or peanuts if desired (add calories accordingly).

    Nice blend of flavors. I used fresh ginger, toasted sesame oil and served the salad on pita bread. Added a few peanuts for some crunch. All that broccoli? Must be healthy! - 5/12/07

  • used regular soy sauce because I didn't have low-sodium and it was too salty and a bit too vinegary .... I think I should have made 1/2 the dressing - 6/7/12
