Egg Salad

Introduction

Number of Servings: 8

Ingredients

    5 hard boiled eggs
    3 TBSP Mayo w/Olive Oil
    1 TBSP Dijon Mustard
    1 TBSP Pickle Relsih

Directions

Bring water and Eggs to rolling boil. Boil 13 mins, remove from heat and let cool 10 mins. Dump out hot water, and add fresh cold tap water to pot and continue to let cool for another 10 mins.

Remove from the water and peel shell. Chop eggs to desired size. Add Mayo, Mustard and Pickles and mix to well.

Serve with tomato slices, or as a meatless lunch option
