Basic Muffin Recipe

Ingredients

    Wet Mix:
    1/4 Cup butter/margarine
    1/2 Cup Sugar
    2 Eggs
    1 cup milk
    Dry Mix:
    2-1/2 cups Self Raising Flour


    Add Three small - 153 cals per muffin

Directions

Prepare muffin pans. Preheat oven to 200C
Blend thoroughly butter and sugar. Beat in eggs and milk. Carefully mix in flour taking care not to overmix. Place mixture in prepared pans and bake for 20-25 mins. Makes approx 16 medium sized muffins
