Mushroom Quinoa

Ingredients

    1 c. quinoa, rinsed
    1 tbsp. butter
    2 c. beef stock
    2 c. mushrooms
    2 tbsp soy sauce
    Pepper, to taste


Tips

I think quinoa is better if it stands for a few minutes after you've taken it off the heat. Then fluff it around in the saucepan and serve.

Try a reduced-sodium soy sauce, unsalted butter, and low-sodium beef stock to help curb the sodium in this dish. The sodium count shown is using the full-sodium versions of the ingredients and it is a lot!


Directions

Melt butter in a saucepan over medium-high heat. Add quinoa cook for two minutes, stirring frequently. Add remaining ingredients and bring to a boil. Immediately, turn down the heat to a simmer. Cook, uncovered, for an additional 20 minutes or until the water is absorbed.
