MayoCobo Beans, Mexico's Brand of Beans

Ingredients

    2 c onions
    2 c bell pepper
    2 c celery
    8 cloves garlic minced
    1/2 c celantro
    MayoCobo Beans 2 c
    vegetable broth 2 qts
    sea salt
    Freshly ground powder

Tips

Vegetable base or bouillon may be uses in place of salt. Jalapeno or other pepper may be added. May be used in soups, casseroles, burritos,tacos, salads etc.

Directions

Rinse and sort beans ,cover with water and let stand in refrigerator over night. Chop vegetables, Saute half of vegetables except cilantro in 1/4 c broth a in large pot. Pour broth into pot, rinse beans, add to pot. Bring to boil, simmer 1-2 hours Add remainder of vegetables including cilantro. Adjust seasonings. Remove bay leaves. Serve with rice or or other grains.
