Pumpkin Protein "Pancakes"

Introduction

These are quick to make and actually very yummy with cream cheese or fruit on top! These are quick to make and actually very yummy with cream cheese or fruit on top!
Number of Servings: 1

Ingredients

    3 tbsp liquid egg whites
    1/4 cup canned pumpkin
    1/2 serving protein powder (I use Jay Robb vanilla)
    nutmeg, cinnamon, etc.

Tips

Don't try to make the pancakes too big or they are very hard to flip.

Directions

1. In a very small bowl mix the protein powder with a bit of water to the protein powder until it is dissolved and a bit sludgy. Add the pumpkin and any spices to taste.
2. Beat the egg whites in a small bowl until frothy and peaking. Fold or beat in the pumpkin-egg mixture.
3. Cook on griddle or sprayed pan, flipping when one side looks done.
4. Eat.
