"Orange" Veggie Puree

Number of Servings: 8

Ingredients

    1 med sweet potato or yam peeled & roughly chopped (about 5 inches long)

    3 med carrots peeled and sliced into chunks

    2-3 oz water or veggie broth or liquid left after steaming

Directions

Steam sweet potato and carrot chunks in electric steamer for about 8-11 minutes, until easily pierced by fork. Reserve steaming liquid.

Puree veggies in food processor with 2-3 oz water, broth or liquid left after steaming. Blend until smooth.

Makes about 2 cups of puree. Store in fridge up to 3 days, or freeze 1/4 cup portions in plastic zip top bags.
