Brown Rice Summer Salad

Introduction

This is a versatile salad. Add or swap out vegetables, meat, or cheese to your taste. This is a versatile salad. Add or swap out vegetables, meat, or cheese to your taste.

Ingredients

    2 cups cooked brown rice
    1/4 cup finely chopped sweet onion
    1 1/2 cup coarsely grated raw carrots
    1 cup chopped sweet bell pepper
    1 1/2 cup chopped celery
    1/4 cup dried sweetened cranberries
    1/4 cup toasted almond slices or halves
    3 Tablespoons lemon juice
    3 Tablespoons olive oil

Directions

In a large bowl, mix all the ingredients except the lemon juice and olive oil. Place the lemon juice and olive oil in a small jar and shake until blended. Pour over the salad and stir to blend.

Serving Size: Makes 8 1-cup servings
