Avocado Chicken Salad

Introduction

Chicken salad for the family and the week using avocado instead of all that mayo. Chicken salad for the family and the week using avocado instead of all that mayo.
Number of Servings: 15

Ingredients

    1 Rotisseri Chicken
    2 Avocados
    1 cup diced celery
    1/4 cup diced onion
    1 Tbls Olive oil mayo
    1 lime
    salt
    pepper

Tips

If storing overnight, squeeze lime juice over the top to keep it from browning.

Add some cilantro.


Directions

Pull apart the meat from the chicken and place in a bowl. Chop the celery and onion and toss with the chicken. In another bowl mix the avocado, mayo, and juice from half of the lime(more if you prefer the flavor) then add salt and pepper to taste. Finally mix the avocado mixture with your chicken mixture. Enjoy it in a pita or on a salad!
