1 tblsp. Country Crock spread
1 medium onion, chopped
1/2 cup each: red and green pepper, chopped
6 medium mushrooms, sliced
1 oz. cured ham, diced
2 large eggs
2 tblsp. shredded cheddar cheese
no baking needed - using a cover on the pan works just fine!
Serving Size: makes 1 large or 2 medium servings
