Introduction

This is great recipe to use left overs in. Use this as a base and add whatever veggies, potatoes, cheese, etc... you like. This is great recipe to use left overs in. Use this as a base and add whatever veggies, potatoes, cheese, etc... you like.

Ingredients

    1 egg
    2 egg whites
    2 tbs Parmesan Cheese
    Salt and Pepper to taste

Directions

Preheat oven to 375
Heat/cook 1/2-1 C vegetables and 1/2 potatoes in 6" cast iron pan
Whisk other ingredients together
Add to pan
Move pan to oven and cook for 12-15 minutes until set in the middles.
