Freekeh Soup, Palestinian Style

Introduction

This is the traditional way to prepare Freekeh as a soup, except normally chicken is left whole on the bone or removed to make "Imsakhan", which often accompanies Freekeh. I prefer to use chicken breast to keep it healthy and to shred the chicken and return to the pot for ease of eating. I personally keep the skin on the chicken while preparing the broth for more flavor, although it can be made without. Make sure you use bone-in breast, however, or the broth will be flavorless. Ingredients

    1 Cup Dry Freekeh
    2 chicken breasts halves (one whole), with skin and bone
    Water
    1 to 1.5 tsp. Salt
    Diced Onion

Directions

Boil chicken in water in medium pot. The pot should be filled to capacity. When chicken is done, remove chicken and set aside to cool. Add chopped onion and freekeh to broth. Add already boling water if needed in order to attain consistency desired. Bring to a boil, reduce heat and simmer for 30-45 minutes depending on how chewy you like your freekeh. Add more boiling water if needed. While freekeh is simmering, Remove skin from chicken and discard. Using 2 forks, shred chicken breast. Once freekeh is done, add salt in 1/2 teaspong increments until you have reached desired flavor. Add pepper and shredded chicken breast. Return to boil. Enjoy!
