Lemon Rice

Ingredients

    1 cup of uncooked rice(I used basmati)
    1tsp butter
    2-3 cloves of garlic(I use three cause I like a lot of garlic
    Juice from one 2 lemons
    1/8-1/4 tsp black pepper
    1 tbsp of parsley(optional)

Directions

Combine rice, butter, garlic, lemon peel, pepper and broth in medium saucepan.Bring to boil; stir once or twice.Lower heat to simmer.Cover with tight fitting lid.Cook 15-20 minutes or until rice is tender and liquid absorbed.Stir in parsley.

  • The recipe is off in a few ways. First, the ingredients don't match the instructions. Broth? Lemon Juice? I had to look it up on cooks.com to clarify ingredients (thx for mentioning that!) Second, something's wrong in the nutrition calculatiion; no way 1/2 cup serving of rice has only 50 calories! - 8/2/08
