Pat's Italian Chicken

Introduction

This is a dish I have been making for years, modified to use mostly frozen or pantry foods. Feel free to replace the veggies with your choice of fresh or frozen vegetables. Ingredients

    1 Boneless, Skinless Chicken breast, about 5 ounces
    1 serving of Schwans Roasted Peppers and Onions
    1 serving of Schwans California Blend Vegetables
    1 14.28 oz can of Carmelina Italian Diced Tomatoes
    1 Tablespoon of diced garlic.

Tips

I sometimes serve this over pasta or rice. Some extra calories can be added to the dish by tossing in some ripe olives right before serving.


Directions

Defrost the frozen vegetables

Cut the chicken breast up into about 1 inch square pieces. Spray a non-stick pan with olive oil spray for just a second or two. Cook the chicken, turning the pieces, until they are lightly browned on both sides.

Add the peppers and onions to the pan. Stir to mix with the chicken pieces.

Add the other vegetables to the pan. Stir to mix and let the vegetables cook for just a minute or two.

Add the garlic, and mix in well. As soon as possible, add the tomatoes, so as not to burn the garlic.

Toss in a a handful of Italian herbs if you want.

Turn down the heat and let this simmer until the liquid from the canned tomatoes has reduced to almost nothing and the chicken is cooked through.
