Banana Raisin Nut Bread

Ingredients

1 ripe banana, mashed
1/3 cup coconut oil, melted (plus extra for pan)
3 large eggs, well beaten
3/4 cup water
1/2 tsp. pure lemon extract
1 1/4 cups arrowroot flour
1 cup flaxseed meal
2 tsp. baking powder
1 tsp. baking soda
1 tsp. ground cinnamon
1/4 tsp. ground cloves
1/4 tsp. ground ginger
1/2 cup walnut pieces
1/2 cup raisins, unpacked
Tips
This bread freezes well. I make two at a time.
Directions
Preheat oven to 325 degrees and use coconut oil to grease a 9 X 5 inch loaf pan.
Beat melted coconut oil and banana until creamy.
Add eggs, water and lemon extract. Mix well.
Add dry ingredients and mix well.
Then add nuts and raisins and gently mix.
Pour batter into pan and bake for 45-50minutes or until toothpick comes out clean.
Cut in 8 equal pieces.
Serving Size: Makes 8 pieces if you cut them equally.
