Mom's Chili - Revised

Introduction

This chili is more like a soup and doesn't contain vegetables nor is it spicy hot. Season to taste.

My mom made this chili a lot while I was growing up and although I've made it several times (a family favorite), I've lightened up the recipe just a bit.

Number of Servings: 8

Ingredients

    Ground Turkey, Lean, 1 pound
    Onion, diced, 1 med
    Tomato Paste, 1 can, 8-10 oz
    Tomato Soup, 1 can, 10 oz
    Water, 3 cans, 30 oz
    Dark Red Kidney Beans, drained, 1 can, 10 oz
    Chili Beans, 1 can, 10 oz
    Chili Powder, 1 Tbsp

Tips

Season to taste. This recipe is NOT hot or spicy and should be altered according to desired spice level.


Directions

In large pot, cook turkey over medium heat. Drain, if needed. Add chopped onions and mix thoroughly. Cook until slightly tender.

Add tomato paste and mix well. Mixture will be thick. Add tomato soup and mix. Stir in water gradually, mixing after each can added.

Carefully add beans and mix well.

Add chili powder and season to taste.

Simmer over medium heat for approx 30 minutes, reduce heat and simmer for 30 minutes longer.

Serving Size: Makes 8 1-cup servings
