Ingredients

1 teaspoon canola oil
1 large white or yellow onion, chopped
1 pound ground turkey
1 teaspoon chili powder
1 package UNCLE BEN'S® READY RICE® Whole Grain Brown Rice
1 cup salsa
1 (10-ounce) package fresh spinach
1/2 cup shredded low-fat Cheddar cheese
Tips
Top with plain Greek yogurt or chopped avocado, if desired.
Directions
Place a large skillet over medium-high heat. Add the oil, then the onion. Cook for three minutes, until the onions start to soften.
Add the meat and the spices and cook until the meat is no longer pink, about 10 minutes. Use the back of a spoon to break up the meat as it cooks.
Stir in the UNCLE BEN'S® READY RICE® Whole Grain Brown Rice and salsa, then reduce heat to medium and place the spinach on top. Cover and cook for two minutes, until the spinach has wilted. Stir in the cheese and serve.
About 1 1/4 cups per portion.
