Quick Mexican Succotash

Ingredients

    2 tbsp EVOO
    1 cup onion, chopped
    1 medium zucchini, diced
    1 can rotel
    2 cup sweet yellow corn, frozen
    1 can black beans, drained & rinsed
    2 Tbsp taco sauce

Tips

Top with fresh cilantro or lime, if desired.


Directions

Heat EVOO in skillet over medium heat. Once hot, add onion and zucchini cook until soft, about 5-7 minutes.
Once onions are translucent, add corn, black beans, taco sauce & rotel to the pan. Mix ingredients well, cover and let simmer for another 10 minutes.

Serving Size: Makes 8 servings
