Mexican Casserole For Slow Cooker

Ingredients

    1 lb. extra lean ground beef
    1 med. onion, chopped
    1 small green bell pepper, chopped
    16 oz. kidney beans, rinsed and drained
    14 1/2 oz. diced tomatoes, undrained
    8 oz. tomato sauce
    1/4 c. water
    1 envelope taco seasoning
    1 T. chili powder
    1 1/3 c. instant rice, uncooked
    1 c. cheddar cheese

Directions

1. Brown beef and onions.
2. Combine all ingredients except rice and cheese.
3. Cook on low 6-9 hours.
4. Stir in rice and cook until tender.
5. Sprinkle with cheese. Cover and cook until cheese is melted.

Serving Size: Make 8 servings
