Tomato-Lentil Soup

Introduction

This is from the cook book Vegetarian Planet by Didi Emmonds, copyright 1997. I love this recipe and wanted to know the nutritional information, and I wanted to share it with someone on one of my spark teams. Ingredients

    2 T. Olive oil
    1 C. Chopped onion
    2 Garlic cloves, minced
    2 tsp. ground coriander
    1 tsp. ground cumin
    1 Green or red bell pepper, minced
    2 cups dried brown lentils
    1 jalapeno pepper, minced (optional)
    6 C. water or vegetable stock/broth
    1 14 oz can stewed tomatoes, or peeled plum tomatoes.
    1/4 C. Lemon juice
    1/2 tsp. salt
    Freshly ground black pepper to taste

Tips

If you are planning to freeze some of this soup for later, I recommend adding the lemon juice, salt, and pepper to just the portion being eaten.


Directions

1. Heat the oil in a large sauce pan over medium heat. Add the onion, garlic coriander, cumin, and bell pepper and saute for about 10 minutes, stirring frequently. Add the lentils, the jalapeno if using, and the water or stock.

2. Pour the tomatoes into a small bowl, and squeeze them with your hands so they break into small pieces. Add the tomatoes to the soup. let the soup simmer over low heat for 45 minutes.

3. Take the soup off the heat, and add the lemon juice, salt and pepper. Divide into 4 bowls and serve.

Serving Size: Recipe states "Serves 4".
