Introduction

This cheesy delight is easy to make and packed with flavor. Reduce the calorie count with non-fat substitutes where appropiate without any risk to the outcome. Number of Servings: 10

Ingredients

    1/2 stick Butter (4 TBS)
    3 green onions chopped (aprox 1/2 cup)
    2 medium carrots, shredded
    3 medium clery stalks chopped
    32 OZ of favorite chicken broth
    3 cans Potato soup (10.75 oz each)
    2 cups shredded cheddar cheese
    1 cup sour cream
    1 tsp tobasco sauce
    1/2 cup red wine (optional, or the cook may like some on the side)

Tips

Fully loaded then Sharp cheddar is recommended. For Lower calorie and fat count reduce the cheese by half or substitute non or low fat products where appropiate.


Directions

Melt butter in bottom of large soup pan, be carefull not to scorch. saute onions until tender. Add carrots, celery and broth. bring to boil, reduce heat and simmer for 30 minutes. Add Potato soup. Add cheese in small quantities until all of the cheese is melted. Add sour cream, tobasco and wine (if desired). Stir to combine and serve.

Serving Size: Makes aproximately 10 1-cup servings
