No Fat Morning Glory Muffin

Ingredients



    *Flour, white, 1.5 cup
    *Whole Wheat Flour, .5 cup
    Granulated Sugar, .5 cup
    1 tablespoon Cinnamon
    .5 tsp salt
    2 tsp baking powder
    .5 tsp baking soda

    Carrots, grated, 2 cup,
    1 med. apple,cut finely
    Raisins, 1 cup, packed
    Egg, fresh, 2 medium
    apple sauce, 3/4 cup
    1 tablespoon vanilla
    Almonds, .25 cup, slivered

Tips

When this is breakfast I serve it with fruit and sliced cheese.I use an ice cream scoop to make the size uniform.


Directions

preheat oven to 350 degrees
lightly oil muffin tins
mix the dry ingredients in a large bowl and set aside.
In a separate bowl mix the liquids , apple, and carrots .
add the moist to the dry, it will appear quite dry continue stirring gently.

scoop into the prepared tins and bake 15 to 20 minutes !

Serving Size: makes 18 muffins
