Sauteed Scallops Gourmet

Ingredients

    pam cooking spray
    white cooking wine
    butter
    sea scallops

Tips

Serve with rice.

Directions

1. Spray a large skillet with cooking spray.
2. Place the skillet over medium high heat.
3. When the pan is hot, add the scallops. The pan should be hot but not smoking.
4. * Can sprinkle the scallops with a "pinch" of salt and/or pepper.
5. Cook for 4 minutes, adjusting the heat so that it is not too hot.
6. Turn the scallops over.
7. Cook for 4 to 5 minutes.
8. Remove scallops to a plate and cover to keep warm.
9. Add the wine to the skillet and scrape the brown bits in the pan.
10. Add the butter to the skillet and stir. Reduce the liquid by 1/2.
11. Serve the sauce on top of the scallops.
