Paleo Chocolate Chip Cookies

Introduction

This recipe is a TREAT; just because it is Paleo does not make it an everyday health food. That said; I got this recipe from runningtothekitchen.com and love it! Number of Servings: 11

Ingredients

    1 cup almond flour
    1/8 tsp salt
    1/8 tsp baking soda
    3 tbsp melted coconut oil
    2 tbsp honey
    1 tsp vanilla
    1 tbsp almond milk
    1/4 cup chocolate chips

Directions

1. Preheat oven to 350 degrees and line a baking sheet with parchment paper (do not forget to do this; cookies will stick otherwise).
2. Combine dry ingredients in a large bowl.
3. Wisk together wet ingredients in a smaller bowl.
4. Pour the wet ingredients into the dry (as well as the chocolate chips) and stir to combine.
5. Use a tbsp to measure out cookies, flatten with spoon and bake for about 11 minutes, or until the edges start to brown.
6. Allow to cool completely before removing cookies (unless you can't resist trying just one)

Serving Size: makes 10 cookies
