Lemon-Dill Crab Cake

Ingredients

    8 oz. crab meat, special
    4 Tbsp. Mayonnaise
    1/4 cup lemon juice
    1/2 cup cracker meal
    1 Tbsp. dried dill weed
    1 tsp. Old Bay
    1 Tbsp. Olive Oil
    1 Tbsp. Butter
    Salt and pepper to taste

Directions

Whisk together mayonnaise, lemon juice, dill, Old Bay, salt and pepper in to a dressing. Drain the crab meat and pick out any shells. Add to the dressing. Mix in cracker meal. Divide into four equal cakes. Heat oil in a skillet over medium heat. Cook crab cakes for 3-5 minutes per side, until crispy and golden.
