My Valentine's Day Cioppino

Introduction

So hubby and I don't really do anything big or special but I always like to make something special. So hubby and I don't really do anything big or special but I always like to make something special.
Number of Servings: 2

Ingredients

    2 tail (8 oz), frozen Maine Lobster Tail - Grilled (Split the belly and add a little butter)
    6 medium Shrimp, raw
    4 Large Wild Bay Scallops, raw (pan seared)
    4 cloves of Garlic, minced
    1/4 cup of diced Shallots
    1 cup of sliced Leeks (white and light green parts)
    1/2 cup of diced carrots
    2-3 oz of Frozen chopped spinach
    2 to 2 1/2 cups of canned crushed tomatoes
    3 cups of Vegetable Stock
    Basil, 4 tbsp (remove)
    1 container of "More than Gourmet" - Classic Seafood & Shrimp Stock
    1 tbsp Olive Oil
    2 tbsp of reduced fat butter (I used Kerrygold Reduced Fat Irish Butter) for the grilled lobster

Tips

serve with hot buttered slices of toasted sourdough bread.
