Vegetarian Spaghetti Pie

Introduction

Adapted from LynnsKitchenAdventures.com to make vegetarian. Original recipe calls for 6 oz of pepperoni that is degreased when carmalizing onions and added to recipe. I included in tips. Ingredients

    12 ounce spaghetti noodles (corn)
    1 onion finely chopped
    1/2 teaspoon ground red pepper
    3- 14 ounce cans diced tomatoes
    2 cups diced Velveeta cubes
    3/4 cup Carnation canned milk
    6 oz. Philadelphia Cooking Cream Cheese (Italian Seasoning)
    6 oz Mozzarella Cheese, part skim milk, 6 oz



    6 ounces pepperoni, diced (not inc. in nutrients)

Tips

If pepperoni is used in a skillet cook pepperoni and onion until onion is tender and pepperoni is slightly crisp. If you use a low fat pepperoni áyou may need to add a little oil. I would use cooking cream rather than oil.


Directions

1. Preheat oven to 425 degrees.

2. Cook spaghetti noodles according to direction.

3. In a skillet cook onion sauteed in cooking cream until onion is tender.

4. Add ground red pepper and tomatoes and cook on low for about 15 minutes or until sauce has thickened slightly.

5. Combine cooked noodles, tomatoes mixture, and milk.áStiráto mix well.

6. Stir in cheese and spread in a prepared 9Î13 orásimilarásize pan. Top with Mozilla. (about 6 oz)

7. Bake for 15-18 minutes or until heated through.

8. Let sit for 5 minutes before serving.
