Whole Grain Banana Muffin


This is a light, very tasty muffin. This is a light, very tasty muffin.
Number of Servings: 9


    2 tbsp wheat germ
    10 tbsp oat bran (or enough added to wheat germ to make 3/4 cup)
    1/4 cup wheat flour
    1/2 cup bread flour (can substitute all-purpose flour)
    1/2 tsp salt
    2 tsp baking powder
    2 tbsp dark brown sugar
    1 large egg
    1 tbsp canola oil
    1 cup 1% milk
    2 mashed very ripe bananas


I used the convention bake setting. If you don't use convention, these may require a few more minutes.


Blend dry ingredients. Blend remaining ingredients except bananas and stir well into the dry ingredients. Mix in the bananas.

Spoon into muffin cups till almost full.

Bake at 400 degrees for 20 minutes
