1.15 pounds lean thin-cut pork loin chops 6 medium red potatoes, cubed 1 packet ranch dressing mix 1 jar (4-5 oz) pimentos 1/2 cup chopped onions (about 1/2 a medium onion) 1 cup water
Spray slow cooker with cooking spray. Place cubed potatoes in bottom. Top with pimentos and onion. Sprinkle about half the ranch dressing mix over the potatoes. Place pork chops over the top, sprinkle with remaining dressing mix (I sprinkled about half of what was left on one side, flipped them over and sprinkled the rest on the other side). Add 1 cup water. Cover and cook on low 6-7 hours.
