6 Week Bran Muffins

Introduction

The batter for these muffins can be kept in the frig for up to 6 weeks and still taste good. Mine never lasted that long. Low calorie version. The batter for these muffins can be kept in the frig for up to 6 weeks and still taste good. Mine never lasted that long. Low calorie version.
Number of Servings: 144

Ingredients

    2 C. All Bran
    2 C. Boiling Water (Pour over Bran)
    1/4 C Oil
    1 C. Applesauce
    1 1/2 C Sugar
    1 1/2 C Stevia in the Raw
    4 Eggs
    2 C. Raisens or Dates
    1/1/2 C. Walnuts
    Blend these ingrediants and Fold in:
    1 TB Salt
    5 Tsp Baking Soda
    5 C. Whole Wheat Flour
    4 C. All Bran
    Now it is very stiff so Add...
    4 C. Buttermilk
    Stir until all is blended and then NEVER stir again
    PLACE IN THE REFRIGERATOR COVERED
    Spoon into muffin pans as needed

Directions

Bake at 400 for 20 min or less.
