Roasted Root Veggies (no potatoes)

Roasted Root Veggies (no potatoes)

Number of Servings: 6

Ingredients

    2 medium baby Zucchini, sliced
    8 oz Radishes, halved
    8 White Pearl Onions onions, halved
    1 1/2 cup Beats, large cubes
    9 brussels sprouts, halved
    8 large Button Mushrooms, quartered
    1 tbsp Extra Virgin Olive Oil
    2 tsp Garlic powder
    1 tsp Kosher Salt
    Pepper to taste

Directions

Pre heat oven at 375˚.

Put vegetables on foil lined baking sheet. sprinkle on seasonings and drizzle olive on oil. Mix well with hands and spread evenly.

Roast for 50 to 60 min., until veggies are cooked through.
