Ingredients

    1 T olive oil
    1/2 cup chopped onion
    1 cup chopped sweet bell peppers
    2 whole tomatoes, chopped fine. Seeded and peeled if desired
    Optional hot peppers and black olives
    2 eggs
    pinch of thyme
    feta cheese to taste

Tips

Low and slow is the name of the game here. Keep the heat down and let the veggies get nice and soft and let the flavors blend.

Directions

Heat olive oil and cook onions until translucent. Add peppers and cook until soft. Add tomatoes, thyme, and any other veggies that strike your fancy and do likewise.

Add eggs and feta cheese and stir the whole mess together. Add black pepper and some fresh parsley as a garnish, if desired. Yum!
